Recipe inspired by Southwest Quinoa Salad on spoonwithme.com
My version gets rid of “unnecessary extras” that add to my macros.. by all means prepare the full version in the hyperlink above!!
Prepare 2 cups of Quinoa.
Chop all veggies to desired size, I prefer smaller.
- 2 avocados
- 1/2 red onion
- 1-2 bell peppers (I used one red and one green)
- 1-2 jalapeño peppers
- 1 tomato
- 1-2 cobs of corn or a can of corn
- 1 can of black beans, rinsed
- Juice from 6 limes
- 1/2 tsp cumin
- 3/4 tsp cayenne pepper
- 1 tbsp minced garlic
…I put that in a mason jar and shake it up!
Mix everything together!!! Refrigerate until chilled and enjoy! You can keep vinaigrette separate and add it when you’re ready to serve so it doesn’t get soggy! Add chicken/steak and it really tastes just like a burrito bowl from chipotle 🙂
